Simple Keto Mozzarella Sticks

This recipe is designed to teach everyone how to make simple keto mozzarella sticks.

Ingredients

  • 6 string cheese sticks or cut mozzarella cheese into twelve 4-inch by 1-inch sticks
  • 2 large eggs
  • 10 ml milk of choice (2 tsp)
  • 37 grams coconut flour (1/3 cup)
  • 100 grams finely crushed pork rinds or keto breadcrumbs
  • 1 TBS dry Italian seasonings adjust or change according to taste

Instructions

  • Cut the cheese sticks in half to create 12 portions. Whisk the eggs and the milk together in a wide bowl until fully combined. Set aside. Place 2 TBS of the coconut flour into another wide bowl and set the remaining coconut flour to the side.
  • Use a fork and stir together the crushed pork rinds and the seasonings. Place about 1/4 of the pork rind mixture into a third wide bowl and set the remaining pork rind mixture to the side. Place the cheese portions one a t a time into the coconut flour and turn to lightly coat the cheese
  • Place the coated cheese portion into the egg mixture and turn to fully coat. Lift the cheese stick and allow the extra egg mixture to drip back into the bowl. Place the coated stick into the pork rind mixture and turn to fully coat the cheese. Use fingers and gently press the pork rind mixture into the egg mixture on the cheese stick.
  • Once coated place the cheese stick back into the egg mixture and again turn to coat. Allow extra egg mixture to drip back into bowl. Place the coated stick again into the pork rind mixture and press to secure the double coating. Place the fully coated stick onto a lined baking sheet.
  • Repeat the coating process until all the cheese is fully coated and on the baking sheet. Add more coconut flour to the coconut bowl and more pork rind mixture to the pork rind bowl as needed. Place the fully coated sticks on the baking sheet into the freezer and freeze at least 1 hour or until completely firm.
  • Preheat an air fryer to 390 degrees and lightly spray the air fryer basket with cooking spray. If don't have an air fryer preheat oven to 400 degrees and line another large baking sheet with parchment paper. Remove the mozzarella sticks from the freezer.
  • Place the cheese in a single layer in the basket of the air fryer or on the prepared baking sheet. Leave space between each one of the sticks. Air fry at 390 degrees for 6 to 7 minutes or until golden. If baking bake at 400 degrees 6 to 10 minutes or until golden.
  • Open the air fryer drawer and allow the sticks to sit in the drawer for about 3 minutes to firm up. If baking remove from the oven and sit on baking sheet 3 minutes to firm up. Once firm serve immediately.
