10 Minute Keto Chicken Chow Mein

Ingredients

  • 1 TBS oil of choice
  • 7 TBS keto hoisin sauce
  • 2 TBS liquid aminos or light soy sauce
  • 1/4 cup rice vinegar or apple cider vinegar
  • 2 tsp oil of choice
  • 2 lbs boneless chicken breast chopped into 1 inch pieces
  • 4 cups finely chopped mixed vegetables of choice see video
  • 9 oz keto cooked noodles of choice

Instructions

  • Preheat the 1 TBS of oil in a large skillet over medium heat until the oil is ho (about 3 to 5 minutes) In a small bowl whisk together the hoisin sauce, liquid aminos, vinegar, and the remaining 2 tsp of oil of choice until fully combined. Set aside. Place the chicken in the skillet with the heated oil.
  • Stir to lightly coat the chicken with the oil. Cook about 5 minutes stirring often until the chicken is mostly cooked. Move chicken to the side of the skillet. If the skillet seems dry add another tablespoon of oil and let it heat a couple of minutes.
  • Add the vegetables and stir to combine with the chicken. Allow to cook stirring often about 5 more minutes until the vegetables are tender and chicken is fully cooked. Pour the sauce over the chicken and vegetables until fully combined. Stir in the desired amount of cooked keto noodles of choice. Serve warm.
