Ingredients
30gramscoconut flour (1/4 cup)
7gramsbaking powder
1/4tspsalt
64gramsgranulated sweetener of choice (1/3 cup)I used granulated monkfruit sweetener
10gramscocoa powder (2 TBS)
2largeroom temperature eggs
55gramsbutter, melted and cooled (1/4 cup)
60mlslightly warm milk (1/4 cup)
2gramsvanilla extract
Instructions
Preheat oven to 350 degrees. Line an 8 x 4 inch loaf pan with parchment paper. Allow the paper to hang over the sides of the pan for easy removal. Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir in the eggs, butter, milk and vanilla until fully combined and smooth.
Pour mixture into the prepare loaf pan. Place into preheated oven and bake at 350 degrees for 25 to 30 minutes or until firm and a tester comes out clean. Remove from the oven. Allow to cool in the pan at least 30 minutes to firm up. Remove from the pan and transfer to a wire rack, Allow to cool completely before slicing. If desired dust with powdered sweetener before serving
