1TBSolive oil
1TBSapple cider vinegar
1TBSmayonnaise or plain yogurt
1/4tspgarlic powder
1/8tsppepper
1/8tspdry dill weed
1/4tspsalt
1/2tspgranulated sweetener of choiceI used granulated monkfruit sweetener
1/2smallsquash, cut into thin strips
1/2smallzucchini, cut into thin strips
1/4smallred onion, cut into thin strips
3minisweet peppers, cut into thin strips
Instructions
In medium mixing bowl stir together the oil, apple cider vinegar and mayonnaise until fully combined. Add all the vegetables and stir until the vegetables are coated with the dressing. Cover and place in the refrigerator for at least 30 minutes before serving. Store leftovers in the refrigerator up to 3 days.
