Keto Loaded Zucchini

This recipe is designed to teach everyone how to make easy loaded zucchini

Ingredients

  • 3 medium zucchini or yellow squash
  • desired amount of shredded cheese
  • 4 slices bacon, cooked and crumbled more of less depending on how much bacon you like

Instructions

  • Preheat oven to 425 degrees. Line a large baking sheet with foil
  • Cut tops and bottom of zucchini off. Cut each zucchini in half horizontally. Cut each half in half again vertically about 3/4 of the way through. leave the bottom skin intact to keep the zucchini together. You should be able to open the zucchini without it separating
  • Place cut zucchini onto the prepared baking sheet and bake at 425 degrees for 10 minutes or until the zucchini is slightly soft
  • Top each zucchini half with the desired amount of cheese and bacon. Bake at 425 degrees for another 5 minutes or until cheese is fully melted
  • Remove from oven. Place onto a serving platter. Top with sour cream or ranch if desired. Serve immediately

Notes

This recipe yields 6 servings 1 servings equals 1 zucchini half plus 2 TBS of colby cheese and 2 TBS of bacon
