Ingredients
3mediumzucchini or yellow squash
desired amount of shredded cheese
4slicesbacon, cooked and crumbledmore of less depending on how much bacon you like
Instructions
Preheat oven to 425 degrees. Line a large baking sheet with foil
Cut tops and bottom of zucchini off. Cut each zucchini in half horizontally. Cut each half in half again vertically about 3/4 of the way through. leave the bottom skin intact to keep the zucchini together. You should be able to open the zucchini without it separating
Place cut zucchini onto the prepared baking sheet and bake at 425 degrees for 10 minutes or until the zucchini is slightly soft
Top each zucchini half with the desired amount of cheese and bacon. Bake at 425 degrees for another 5 minutes or until cheese is fully melted
Remove from oven. Place onto a serving platter. Top with sour cream or ranch if desired. Serve immediately
