5 Minute Keto Corn Syrup Substitute

This recipe is designed to make a keto corn syrup substitute that's ready in 1 minute

Ingredients

  • 1 cup water
  • 1 cup granulated sweetener of choice for dark corn syrup use brown sugar sweetener of choice
  • 1/2 tsp vanilla extract
  • 3/4 tsp xanthan gum

Instructions

  • Microwave water in a medium microwave safe bowl on high for about 2 minutes or until the water is boiling
  • Whisk in the sweetener for about 20-30 seconds or until fully dissolved
  • Microwave on high another 30 seconds or until smooth. Whisk in the vanilla until fully combined
  • Gradually add the xanthan gum in small amounts whisking while adding. Once all the xanthan gum is added whisk for another 20 seconds or until the xanthan gum is fully dissolved and thickened. Allow to cool to room temperature before using. Store in air tight container for up to 1 week.
