90 Second Keto White Mug Cake (Nut Free And Gluten Free)

Ingredients
2 TBScoconut flour
2TBSmonkfruit sweetener or granulated sweetener of choice
1/2tspbaking powder
1largeegg, room temperature
2TBSmilk of choice
1TBS oil of choice
1/2tspvanilla extract or extract of choice, optional
Instructions
Lightly grease a 12oz. microwave safe mug (mug must be at least 12 ounces the cake rises and falls back into cake form while it cooks)
In the mug place the dry ingredients. Use a fork and stir the dry ingredients until no lumps are in the dry ingredients
Add the egg, milk, oil and extract (if using) Use a fork and stir until fully combine and no dry ingredients are in the mug. Use a spatula and scrape down the sides of the mug and smooth top of the batter
Cook on high about 1 minute and 30 seconds or until the top of the cake is firm and a tester comes out clean. Microwave times will vary depending on the wattage of your microwave. My microwave is 1100 watts.
Allow to cool at least 5 minutes. Eat as is or top with the topping of choice
