2TBSmonkfruit sweetener or granulated sweetener of choice
1/2tspbaking powder
1largeegg, room temperature
2TBS milk of choice
1TBSoil of choice
1/2tspextract of choice. optional
Instructions
Lightly grease a 12oz microwave safe mug. (mug must be at least 12 ounces the cake rises and falls back into a cake shape while it cooks)
In the mug combine all the dry ingredients. Use a fork and stir together the dry ingredients until no lumps are in the dry ingredients
Add the remaining ingredients. Use a fork and stir until fully combine and smooth, Use a spatula and scrape down the sides of the mug and smooth the top of the batter
Cook on high for 1 minute and 30 seconds or until the top of the cake is firm and a tester comes out clean
Allow to cool at least 5 minutes. Eat as is or top with toppings of choice
