Preheat oven to 400 degrees. Line a large baking sheet with parchment paper
In a large mixing bowl sift or whisk together all the dry ingredients until there are no lumps in the dry ingredients
Add the eggs. Whisk the eggs into the dry ingredients until they are fully combined and all the dry ingredients are moistened
Add the butter. Whisk the butter in until fully combined and a soft dough has formed
Form the dough into a ball. Massage the dough in hands about 1 minutes to make sure everything is fully combined and sticking together. Dough should be moist and not crumbly
Break up the dough on the bowl. Gradually add the cheese a little at a time stirring after each addition. Form the dough back into a ball. Massage the dough once again about 30 seconds to make sure everything is fully combined
Place the dough on a clean worksurface. Press or roll the dough out to a 6x8 inch rectangle. Cut the rectangle lengthwise into 6 strips about 1 inch wide. Form 1 strip at a time into a smooth rope. KEEP DOUGH MOIST AT ALL TIMES. DAMPEN OR GREASE FINGERS FREQUENTLY. . Shape the rope into a U shape, Take on end of the U shape and arch into the middle of the U. Dampen fingers and seal the end into the U
Take the opposite end of the U shape and arch it over the other strip and into the U shape (it will sort of look like a heart with an X in the middle) Dampen fingers and seal the end into the U shape.. MAKE SURE THE DOUGH REMAINS SMOOTH AT ALL TIMES. ANT CRACKS WILL CAUSE THE PRETZEL TO BREAK WHILE BAKING
Place the shaped pretzels onto the prepared baking sheet. Place in the preheated oven. Bake at 400 degrees 12-15 minutes or until lightly golden.
Remove from the oven. Allow to cool on the pan about 10 minutes or until firm enough to remove from the pan without breaking. Serve warm with favorite dip.
