Ingredients
10ozfrozen fruit of choice
2/3cupcoconut cream or coconut milkcan also use heavy whipping cream for non dairy
4TBSpowdered monkfruit/allulose blend or powdered sweetener of choice
2tspvanilla extract
1tspxanthan gumthis is a must have
Instructions
Place all ingredients in a large blender. Make sure your blender can chop ice. Blend on high 1 minute or until the texture of soft serve ice cream. Eat immediately or place in freezer safe container and freeze 30-45 minutes for a firmer texture. This ice cream is meant to be eaten the same day. If it is frozen over night it will freeze solid. This recipe can also be cut in half if needed
