Ingredients

  • 16 ice cubes
  • 2/3 cup coconut cream or full fat coconut milk can use heavy whipping cream of non dairy free
  • 3 tsp Javy Microdose Coffe or coffee extract can also use 2 tsp of instant coffee powder
  • 4 oz cold cream cheese
  • 4 TBS monkfruit sweetener or granulated sweetener of choice can use powdered sweetener for a slightly thicker texture
  • 4 TBS keto chocolate chips
  • chopped sponge cake or vanilla cookies, optional
  • desired amount of brandy, optional

Instructions

  • Place all ingredients except chocolate chips and sponge cake, if using in a large blender. Make sure the blender can chop ice. Blend on high for 1 minute or until it is the texture of soft serve ice cream. Eat immediately or place in a freezer container and freeze 30-45 minutes for a firmer texture. This recipe is designed to be eaten the same day. If frozen overnight it will freeze solid. This recipe can also be cut in half.
