Ingredients
84gramscoconut flour (3/4 cup)
2tspbaking powder
130gramsgolden monkfruit sweetener (2/3 cup)
4largeeggs, room temperature
1/2cuproom temperature butter, softened
1/4cupplain yogurt or sour cream, room temperature
2tspvanilla extract
80gramsketo white chocolate chips or add-in of choice, optional (1/2 cup)
Instructions
Preheat oven to 350 degrees. Line 8 x 8 inch cake pan with parchment paper. Allow the paper to hang over the sides slightly for easy removal
In a large mixer bowl sift the dry ingredients together until there are no lumps
Stir the eggs in until all the dry ingredients have been moistened. Add the butter and stir until fully combined
Stir in the yogurt and vanilla until fully combined and smooth. Form dough into a ball. Roll ball around to make sure of the texture Gradually fold in the white chips (if using) until evenly distributed throughout the dough
Pour batter into the prepared cake pan. Use a spatula and spread the batter evenly throughout the cake pan
Bake in preheated oven at 350 degrees for 20-25 minutes or until a tester comes out clean. Remove from the oven and allow to cool in the pan about 1 hour or until firm
Grasp paper "handles" and carefully lift the blondie slab and transfer to a wire rack. Allow to cool completely before slicing. Store leftovers in an airtight container at room temperature up to 1 week
