Ingredients
4largeegg yolks
45gramscoconut flour
1/2tspxanthan gum
salt dry seasonings of choice optional
Instructions
in small bowl whisk together the dry ingredients until fully combined and no lumps
Place a saucepan about halfway full of water over medium heat. Allow it to come to a full boil while making the pasta
in a separate large mixing bowl. Beat the eggs together until fully combined and smooth
Gradually add the dry ingredients into the eggs until fully combined and the dough is no longer sticky
Line a clean worksurface and roll out very thin but not see througn. Cut into desired size pieces of pasta
Check on water and make sure it is at a full boil. Place pasta into boiling water
Cover and cook 2 to 4 minutes or until pasta can be pickedup wuth a fork. Drain pasta and serve with desired sauce.
This can be made ahead and frozen. To cook frozen pasta: Place frozen pasta into boiling sauce and cook uncovered 2 to 3 minutes or until heated through
