This recipe is designed to teach everyone hoe to make easy low carb sugar free cookie bars.

Ingredients
2/3cupalmond flour
2/3cupvital wheat glutensee notes for gluten free
2/3cupoat flour or gluten free flour of choice
1 1/4tspbaking powder
1/2tspsalt
2cupsgranulated stevia
3/4cupcocoa powder
1 1/4cupsvery soft butter
2largeeggs
4tspvanilla extract
1cupsugar free chocolate chips, optional
1cupnuts, optional
chocolate frosting, optional
Instructions
Preheat oven to 350 degrees. Line a 13 x 9 inch cake pan with parchment paper
In a medium mixing bowl whisk together almond flour, vital wheat gluten, oat flour, baking powder, salt, stevia and cocoa until no lumps remain in the flour
In a large mixer bowl combine softened butter, eggs, and vanilla. Add dry ingredients to wet ingredients. Beat on low 30 seconds or until fully combined and no dry ingredients are left in the bowl. Stir in add ins with a wooden spoon if using them
Spread batter evenly in prepared cake pan. Bake for 15-20 minutes or until tester comes out clean
Let cool in pan for 5 minutes then cut into bars of desired size. Place of wire rack to cool completely. Eat or place in an airtight container and store at room temperature
If frosting the bars then let cool completely and frost before cutting into bars
Notes
For Gluten Free: substitute 2/3 cup vital wheat gluten for 2/3 cup almond flour + 1 tsp xanthan gum. Check cookie bars after 15 minutes of cooking
