Preheat oven to 400 degrees. Line an 8 x 4 inch loaf pan with parchment paper and allow the paper to hang over the sides for easy lifting once the cobbler is baked. Set aside
In a medium mixing bowl combine all of the filling ingredients until fully combined and the berries are lightly coated. Set aside
In a large mixing bowl sift together the dry topping ingredients until there are no lumps. Stir in the eggs, butter and vanilla until fully combined and a smooth dough has formed. Set aside
Pour filling ingredients into the prepared loaf pan and distribute evenly throughout the pan
Scoop the topping out by tablespoonfuls and drop over the filling. Use a fork or fingers and spread the topping evenly over the filling
Place into preheated oven. Bake at 400 degrees for 25 to 30 minutes or until golden on top
Remove from the oven. Allow to rest in the pan about 20 minutes so the ingredients can set in
Cut desired slice. Serve immediately. Store leftovers in an airtight container at room temperature up to 3 days
