Ingredients
1TBSbutter
3/4cupmilk of choice
1tspcoconut flour
1/4tspxanthan gum
3ozshredded cheese of choice
dry spices and seasonings of choice, optional
Instructions
Place butter in a medium saucepan over medium heat and stir until the butter fully melts. Add the milk and stir for 1 minute or until the milk is heated
Sprinkle in the coconut flour and stir until combined. Sprinkle in the xanthan gum and stir at least 30 seconds to fully dissolve the xanthan gum. Continue to stir for 3 minutes or until the sauce is bubbly
Gradually stir in the cheese in small amounts. Stir the cheese and allow to melt after each addition until all cheese is fully melted and sauce us smooth
Serve warm with chips, vegetables, nacho fries or food of choice. Allow leftovers to cool completely. Store in an airtight container in the refrigerator up to 1 week. Sauce thickens as it cools. If it becomes too thick warm on the stove or in the microwave until the sauce becomes smooth again
