Ingredients
116gramsberry or fruit puree of choice (1/2 cup)
30mllemon juice (2 TBS)
6gramsgelatin powder (1 3/4 tsp)
30gramsgranulated sweetener of choice, adjust to taste (3 TBS)
174gramsberry or fruit puree of choice (3/4 cup)this for jelly only
216gramschopped fruit or berries of choicethis is for jam only
Instructions
Place medium saucepan on stovetop. Do not turn on heat. Add the lemon juice. Sprinkle the gelatin over the juice and allow to sit for 2 minutes to soften and thicken
Add the 116 grams of puree. Stir to combine and the sweetener. Allow to sit another minute to make sure the gelatin powder is soft
Turn on the stove to medium-low heat. Stir gently for 5 minutes until the gelatin is fully dissolved and mixture is smooth. Do not allow to come to a boil
Remove from the heat. For jelly stir in the rest of the 174 grams of puree. For jam stir in the chopped fruit until fully combined. For jam use a potato masher and mash the fruit to desired consistency
Pour jam or jelly into airtight container and place in the refrigerator overnight or until jelled.
Remove from the refrigerator. Use immediately. Store leftovers in the refrigerator up to 1 week or freeze up to 6 months
Notes
This recipe yields about 2 cups. 1 serving equals about 2 TBS
