Ingredients
1lbsalmon fillet
56gramsolive oil or oil of choice (1/4 cup)
salt and pepper to taste
1/2tspgarlic powder
1/2tspdry dill weed
1/2tspdry parsley
1/2tspdry paprika
16ozfresh or frozen, rinsed mixed vegetables of choice
Instructions
Preheat oven to 425 degrees. Line a large baking sheet with foil and lightly spray the foil with cooking spray
Cut the salmon into 5 equal pieces and place onto the prepared baking sheet. Set aside
Place the oil and seasoning into a large mixing bowl and whisk to fully combine. Lightly brush the top of the salmon with the oil mixture. Said aside
Place the vegetables into the remaining oil mixture and toss to fully coat with the oil. Place baking sheet into the preheated oven and bake at 425 degrees for 15 minutes or until the thickest part of the salmon's 130 degrees
Remove from the oven and allow to sit on the pan for 5 minutes to finish cooking. Serve immediately. Store leftovers in an airtight container in the refrigerator up to 3 days
