24gramsgranulated sweetener of choice (2 TBS), adjust to tasteI use granulated monkfruit sweetener
2gramsbaking powder (1/2 tsp)
1/4tspground cinnamon. adjust to taste
1/4tspground nutmeg, adjust to taste
1/4tsp ground allspice, adjust to taste
1largeroom temperature egg
30mlroom temperature milk of choice (2 TBS)
14gramsoil of choice (1 TBS)
2gramsvanilla extract, adjust to taste (1/2 tsp)
Instructions
Place dry ingredients into a 12 oz microwave safe mug. Use a fork and stir the dry ingredients together until there are no lumps. This cake rises and falls while it cooks so make sure your mug is big enough or place your mug on a microwave safe paper plate to avoid overflow
Stir the egg, milk, oil and extract in until fully combined and thick. Microwave on high 90 seconds or until the top is set and a tester comes out clean. Times can vary depending on the size of mug and wattage of microwave
Remove from the microwave and allow to sit 5 minutes before serving. Serve warm of cool to room temperature and top with whipped cream or frosting of choice.
