Keto Meatball Sandwiches

This recipe is designed to teach everyone how to make quick and easy keto meatball sandwiches

Ingredients

Meatballs

  • 1 1/2 pounds ground beef or turkey
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dry oregano
  • 1/4 tsp dry basil
  • seasoned salt to taste
  • seasoned pepper to taste
  • 1/2 cup low carb bread crumbs or almond meal

Sauce

  • 2: 15 oz cans tomato sauce
  • 12 oz can tomato paste
  • 15 oz can diced tomatoes, undrained
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dry oregano
  • 1/2 tsp dry basil
  • 1/4 tsp dry thyme
  • seasoned salt to taste
  • seasoned pepper to taste

Instructions

  • Preheat oven to 350 degrees. Line a large baking sheet with foil. Lightly spray the foil with cooking spray
  • In a large mixing bowl break up the beef or turkey into small chunks. Add the egg and stir to fully combine.
  • Add milk and stir again to fully combine
  • Add onion powder, garlic powder, oregano, basil, seasoned salt and seasoned pepper. Stir until the seasonings are fully combined.
  • Add breadcrumbs or almond meal and stir to thoroughly distribute the breadcrumbs
  • Use a cookie scoop or 1 TBS and scoop the meat mixture onto the prepared cookie sheet. Use your fingers and press each scoop into a tight ball.
  • Bake 18-20 minutes or until no longer pink. Let stand on baking sheet 3-5 minutes after baking.

Sauce

  • While the meatballs are baking. Preheat a 12 inch skillet over medium heat for 5 minutes. Add the tomato sauce and tomato paste
  • Stir the paste and sauce together until they are fully combined and smooth.
  • Add diced tomatoes, onion powder, garlic powder, basil, thyme seasoned salt and seasoned pepper
  • Stir to fully combine seasonings. Bring to a low boil and reduce the heat to low. Cover and let simmer for 5 minutes.
  • Add cooked meatballs and increase heat to medium. Bring to a low boil. Cover, reduce heat to low and simmer for another 5 minutes to fully incorporate seasonings.

Assemble The Sandwich

  • Slice the sub rolls in half long ways. Scoop the desired amount of meatballs and sauce over the bottom part of the sub roll. Top with shredded mozzarella cheese and cover with the top half of the sub roll. Serve hot.
