Easy Keto Beef and Biscuits

This recipe is designed to teach everyone how to make easy keto beef and biscuits

Ingredients

  • 1 1/2 lbs lean ground beef
  • salt, pepper and dry seasonings of choice
  • 452 grams (2 cups) full fat cottage cheese,
  • 1tsp each garlic powder, onion powder, chicken bouillon granules, dry Italian seasoning
  • 1/4 tsp pepper
  • 12 oz fresh or frozen cooked vegetables of choice if frozen do not thaw
  • 9 cooked keto biscuits
  • 4-8 oz (1-2 cups) shredded cheese, divided

Instructions

  • Preheat oven to 350 degrees. Lightly grease an 8 x 8-inch cake pan. Set aside. Preheat a 12-inch skillet over medium heat 3 to 5 minutes or until warm. Crumble the ground beef into the skillet. Season the beef with seasonings of choice. Cook the beef stirring frequently 5 to 7 minutes or until no longer pink.
  • Remove the beef from the heat and drain the excess fat from the skillet. Set aside. Place the cottage cheese, dry seasonings and pepper in a food processor and process for 1 minute or until completely smooth. Add the blended cottage cheese mixture to the skillet with the beef
  • Add the vegetables and stir until combined and the vegetables and beef are fully coated with the blended cottage cheese. Set aside. Cut the biscuits in half to create a top and bottom portion. Place the bottom portions in a single layer side by side over the bottom of the prepared cake pan.
  • Sprinkle 2 to 4oz (or desired amount of shredded cheese over the biscuit in the pan. Top the cheese evenly with the meat mixture. Sprinkle the remaining shredded cheese evenly over the beef mixture. Place the top portions of the biscuits over the cheese. Bake the casserole in the preheated oven for 20 to 25 minutes or until the cheese is melted and the filling is heated through.
