Easy Keto Carnitas

Ingredients

  • 2 lbs boneless pork roast
  • 30 ml (2 TBS) olive oil
  • 1 tsp salt
  • 1 tsp dry Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 tsp fennel seeds
  • 6 keto soft tortillas
  • shredded cheese and taco toppings of choice

Instructions

  • In a small bowl whisk together the oil and dry seasonings until fully combined. Brush the pork rub all over the entire pork roast. Place the coated roast in a large crockpot. Close the lid. Cook on high for 6 hours or until the internal temperature is in between 145 and 160.
  • Turn the crockpot off. Let the roast sit in the crockpot 5 minutes. Remove the roast from the crock pot. Allow the roast to sit another 10 to 15 minutes before slicing and shredding. After the roast has set, use two forks and pull the pork into shreds.
  • To assemble: Slightly warm the tortillas. Spoon desired amount of shredded pork onto the tortillas. Top the pork with shredded cheese, sour cream. salsa, chopped avocado or topping of choice.
