Ingredients

Cream Cheese Filling

  • 4 oz room temperature, softened cream cheese
  • 1/4 tsp vanilla extract
  • 25 grams granulated sweetener (2 TBS) I used granulated monkfruit sweetener
  • 1 large egg yolk, optional

Dough

  • 14 grams coconut flour (2 TBS)
  • 7 grams fine flaxseed meal (1 TBS)
  • 50 grams bamboo or oat fiber (1/2 cup)
  • 5 grams baking powder (1 tsp)
  • 1/4 tsp salt
  • 9 grams instant dry yeast (1 TBS), optional
  • 3 grams xanthan gum (1 tsp) can substitute with 1 TBS psyllium husk POWDER
  • 25 grams granulated sweetener (2 TBS) I use granulated monkfruit sweetener
  • 2 large room temperature eggs
  • 15 ml apple cider vinegar (1 TBS)
  • 1/2 tsp vanilla extract
  • 120 grams plain Greek yogurt or sour cream (1/2 cup)
  • 3-4 TBS HOT water

Instructions

  • Preheat oven to 350 degrees. Line a large baking sheet with a silicone baking mat or parchment paper. Set aside. Place the filling ingredients in a medium mixing bowl. Beat the ingredients together on medium-low about 30 seconds or until smooth. Stop and scrape down the sides of the bowl as needed. Set aside.
  • Sift the dry dough ingredients into a medium mixing bowl until fully combined and there are no lumps. Set aside. Combine the wet ingredients into a large mixer bowl. Beat on medium-low until fully combined. Reduce mixer speed to low and gradually add the dry ingredients to the wet ingredients until fully combined.
  • Stop and scrape down the sides of the bowl as needed. Reduce mixer speed to low and gradually add the HOT water. Once fully added increase speed to medium-low and beat 20 to 30 seconds or until a wet dough forms. Scrape down the sides of the bowl and allow the dough to sit for 15 minutes to absorb some of the moisture.
  • After 15 minutes scoop the dough out 1/4 cup at a time onto the prepared baking sheet. Use a butter knife and shape each scoop into a circular mound. Spoon 1 TBS of the topping of choice into the center of each mound. Place the Danishes in the preheated oven.
  • Bake at 350 degrees for 25 to 30 minutes until golden. Remove from the oven and allow to cool on the pan for 10 minutes to firm up. Transfer to a wire rack. Serve these warm or at room temperature.
