Keto Zucchini Fries and Pepper Rings
This recipe is designed to teach everyone how to make keto zucchini fries and pepper rings

Ingredients
- 1 medium zucchini
- 1 medium red bell pepper
- 1 TBS olive oil, divided
- 1 tsp paprika
- 1 tsp dry Italian seasoning
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 oz (1/2 cup) fresh parmesan cheese
Instructions
- Preheat an air fryer to 400 degrees. Lightly grease the air fryer basket. Cut both ends off the zucchini. Cut the zucchini in half horizontally. Cut each half into fry size pieces. Set aside. Cut the top off the bell pepper. Slice the pepper into 1/2-inch-thick rings. Cut the white membrane and the seed out of the pepper rings. Set aside
- Stir the dry ingredients together in a large bowl until fully combined. Gradually stir in the parmesan cheese. Pour half of the dry mixture into a large Ziploc bag. Place the zucchini fries in a separate large bowl. Toss with 1/2 TBS of the oil until the fries are completely coated.
- Place the oiled fries in the bowl with the dry ingredients. Toss the fries until fully coated. Place the fries in the preheated air fryer basket in a single layer. Air fry for 5 minutes. Turn and air fry another 3 to 5 minutes until brown and crisp. Once crisp, serve warm with the dip of choice.
- Place the rings in the bowl that had the zucchini. Toss the rings with the remaining 1/2 TBS of oil until the rings are coated. place the rings one at a time into the Ziploc bag with the dry ingredients. Turn the bag to fully coat the rings. Cook and serve the rings the same as the fries
