Quick Keto Chili Lime Shrimp Tacos

Ingredients

Spicy Spread

  • 1/2 cup mayonnaise
  • 2 tsp lime juice
  • 1/2 cup chunky salsa

Tacos

  • 2 lbs shrimp, cooked, deveined and tails removed
  • 2 tsp olive oil
  • 2 TBS chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 TBS lime juice
  • 8 8-10 inch keto soft tortillas
  • taco toppings of choice, optional

Instructions

Spicy Spread

  • Whisk all the spicr spread ingredients together in a small bowl until fully combined. Cover the spread and place in the refrigerator until ready to use.

Tacos

  • Place the shrimp in a large mixing bowl. stir in 2 tsp of the olive oil until the shrimp is coated. Stir in the dry seasonings, salt and pepper until fully combined and the shrimp is coated. Preheat 2 TBS of the oil in a large skillet over medium heat for 3 to 5 minutes until the oil is hot.
  • Add the seasoned shrimp to the preheated skillet. Stir to coat the chicken with the warm oil. Cook 4 to 5 minutes until the shrimp is heated through. Add 2 TBS of the lime juice. Stir to combine. Cook another 1 to 2 minutes until everything is heated through.

Assemble

  • Spoon desired amount of the warm shrimp mixture into the keto tortilla of choice. Remove the spicy spread from the refrigerator. Spoon the desired amount of the sauce over the shrimp. Top the shrimp with some shredded cheese. Top the cheese with the desired taco toppings of choice, if using. Serve immediately.
