Quick Keto Soft and Crusty Sandwich Buns
This recipe is designed to teach everyone how to make quick keto soft and crusty sandwich/burger buns

Ingredients
- 236 grams (1 cup) cottage cheese,
- 2 large eggs
- 56 grams (1/2 cup) coconut flour
- 4 oz (1 cup) mozzarella cheese, shredded
Instructions
- Preheat the oven to 375℉ Lightly grease 3 four-inch diameter silicone burger bun molds or line a large baking sheet with parchment paper. Set aside. Pour the cottage cheese into a small blender and blend for 1 minute until smooth. Pour the blended cottage cheese into a large mixing bowl.
- Whisk the eggs into the blended cottage cheese until fully combined. Sift in the coconut flour until there are no lumps then stir until the coconut flour is fully combined with the wet ingredients. Gradually fold in the shredded cheese until fully combined and evenly distributed throughout the wet dough.
- Form the dough into a ball and roll it around in the bowl a few times. Divide the dough into 3 equal portions. Roll each portion into a smooth ball and place onto the prepared molds or baking sheet. Use hands and slightly flatten each dough ball to create a "bun" shape. If desired melt 1 TBS of butter and brush it over the top of each bun then sprinkle sesame seeds over the melted butter.
- Place the buns in the preheated oven. Bake for 25 to 30 minutes or until golden. Once baked, remove the buns from the oven and allow to cool in the molds 15 to 20 minutes until firm. Once firm. Transfer the buns to a wire rack and allow to cool completely befoe slicing.
- To use: Turn the buns on their side. Cut the buns in half to ceate a top and bottom bun. Fill with desired filling and serve warm or at room temperature.
