Ingredients
4cupsshredded cheese of choiceI use 2 cups colby and 2 cups mozzarella
Chicken Filling
2cupscooked shredded chicken
1cupsalsa
Quick Dip
1cupsour cream
1cupsalsa
1tspchili powder
Instructions
Preheat oven to 375 degrees. Line large baking sheet with parchment paper. Place cheese in 1/2 cup piles onto prepared baking sheet. Spread cheese piles out to 8 inch circles. Make sure there are no gapes in the cheese circles. Bake 10 minutes or until cheese is bubbly and slightly golden on edges. Remove from the oven
Chicken Filling
While the "tortillas" are baking place chicken and salsa in a large skillet over medium heat. Stir and bring to a low boil over medium heat. Scoop 1 to 2 tablespoon of chicken filling in center of each cheese "tortilla". Quickly roll "tortilla" over the filling. Serve immediately
