Pour the 10oz can of coconut milk into ice cube molds. Place in freezer. Freeze at least 1-3 hours or until frozen solid
Place 16 of the coconut ice cubes into a large blender. Make sure the blender is able to blend ice
Add the cream, powdered sweetener, fine coffee and vanilla. Sprinkle in the xanthan gum. Pulse in 5-10 second intervals until the coconut cubes are chopped
Blend on high 1 minute or until the texture of soft serve ice cream. Eat as is or place in freezer safe container and freeze 1 hour or until desired consistency
