Ingredients
56grams(1/4 cup) mayonnaise
19grams(1 1/2TBS) granulated monk fruit adjust to taste
7ml(1/2 TBS) lemon juice
7ml(1/2 TBS) white vinegar
1/2tspsalt, adjust to taste
1/4tsppepper, adjust to taste
5ozgreen cabbage, thinly sliced
2ozpurple cabbage, thinly sliced
2ozcarrots, shreddedsee note
Instructions
Use a fork and stir together all ingredients except coleslaw mix until fully combined and smooth. Gradually fold in the coleslaw mix with a wooden spoon until fully combined and all the coleslaw mix is coated with the dressing. Cover and place in the refrigerator at least 2 hours before serving
Notes
Can substitute the vegetables out for 7 oz of premade coleslaw mix
