Ingredients
120gramscoconut flour (1 cup)
15gramsbaking powder (1 TBS)
1/4tspsalt
dry seasonings of choice, optional
3largeeggs, room temperature
1/2cupvery soft room temperature butter
123gramsroom temperature plain yogurt or sour cream
63gramsshredded cheese of choice (3/4 cup) adjust to taste
80gramsfinely chopped ham (1/2 cup) adjust to taste
Instructions
Preheat oven to 400 degrees. Line 2 large baking sheets with parchment paper. Set aside
Sift all the dry ingredients into a large mixing bowl until everything is fully combined and there are no lumps in the dry ingredients
Stir in the eggs until all the dry ingredients are moist. Stir in the butter and yogurt until everything is fully combined and a smooth dough us formed
Gradually fold in the cheese and ham until fully combined and evenly distributed throughout the dough
Scoop dough out about 3 TBS at a time onto the prepared baking sheets. Roll each scoop into a smooth ball and place about 2 inches apart on the baking sheets. Flatten the tops of the dough balls and form into a biscuit shape
Bake at 400 degrees 15 to 20 minutes or until golden. Remove from oven. Allow to cool on pan about 5 minutes. Eat immediately or transfer to a wire rack and cool completely. Store leftovers in airtight container in the refrigerator up to 5 days
