2 Minute Keto Vanilla Mug Cake

Ingredients

  • 14 grams coconut flour (2 TBS)
  • 5 grams baking powder (1 tsp)
  • 1/8 tsp salt
  • 1 large room temperature egg
  • 30 ml oil of choice (2 TBS)
  • 40 grams keto maple syrup (2 TBS)
  • 15 ml milk of choice (1 TBS)
  • 1/2 tsp vanilla extract

Instructions

  • Place the dry ingredients into a mug that is at least 12 oz or bigger. Whisk the dry ingredients together until there are no lumps. Add the wet ingredients. Whisk until fully combined and smooth. Microwave on high 1 1/2 minutes. Test the texture.
  • If a tester does not come out clean microwave on high 30 seconds more or until a tester comes out clean. Remove from the microwave and allow to sit for 2 minutes before serving. If desires top with whipped cream. frosting or toppings of choice.
