Ingredients
127grams(3/4 cup) strawberries or fruit of choice
34grams(1/4 cup) blueberries or fruit of choice
38grams(3 TBS) granulated sugar substitute I use granulated monkfruit sweetener
60ml(1/4 cup) room temperature water
9grams(1/2 oz) unflavored gelatin powder or agar agar
Instructions
Place all ingredients except the gelatin powder into a large food processor. Blend for 1 to 2 minutes or until completely smooth liquid. Pour the mixture through a fine mesh strainer to remove any large pieces. Measure out about 1/2 cup of the strained fruit juice
Pour the juice into a small saucepan over medium-low heat. Whisk the juice constantly for about 1 minute or until the sweetener is fully dissolved. Gradually sprinkle the gelatin powder into the juice. Whisk constantly for 2 to 3 minutes or until the gelatin powder is fully dissolved.
Remove the mixture from the heat. Divide the mixture evenly between the desired silicone molds. Place in the refrigerator at least 1 hour until fully set.
Notes
This recipe yield about 75 gummy snacks. One serving equals about 5 pieces
