Ingredients

  • 7 large eggs
  • 4 oz (1 cup) shredded cheddar cheese
  • 4 1/2 oz (4 to 5 slices) deli sliced ham, chopped
  • 4 oz (4 to 5) mini sweet peppers, chopped
  • 38 grams (1/4 cup) red onion, chopped
  • 1 oz baby spinach, torn into small pieces
  • 46 ml (3 TBS) coconut milk
  • 1 tsp salt
  • 1/2 tsp each pepper, garlic powder, onion powder, paprika
  • 56 grams (2 slices) keto bread, cubed
  • sour cream, salsa or toppings of choice, optional

Instructions

  • Preheat oven to 350 degrees. Lightly grease a 4-quart casserole dish. Set aside. In a large bowl whisk the eggs together until combined and a universal yellow. Gradually stir in shredded cheese, ham, peppers, onions and baby spinach until fully combined and evenly distributed throughout the eggs.
  • Gradually stir in coconut milk, salt and dry seasonings until fully combined and evenly distributed throughout the mixture. Pour the egg mixture into the prepared casserole dish. Gradually stir in the bread cubes until combined and the bread cubes are evenly distributed
  • Spread mixture evenly throughout casserole dish. Bake in the preheated oven for 20 to 25 minutes until eggs are fully set. Remove the casserole from the oven and allow to cool at least 5 minutes before slicing and serving. If desired top individual slices with sour cream, salsa or topping of choice.
