Combine water, sweetener, and salt in a medium saucepan over medium heat.
Whisk constantly until mixture comes to a low boil and sweetener is fully dissolved
Whisk continuously and gradually add 1/2 tsp of the xanthan gum. Allow the xanthan gum to dissolve after each addition whisking constantly. Once the xanthan gum is fully added whisk vigorously for about 30 seconds to make sure the xanthan gum is fully dissolved
Bring back to a low boil. Simmer without stirring about 3 minutes or until the mixture is a consistency of thin syrup
Remove from the heat. Whisk in the extract until combined. Whisk continuously and gradually add the remaining 1/2 tsp of xanthan gum. Once the xanthan gum is fully added whisk vigorously for another 30 seconds or until the xanthan gum is fully dissolved and the mixture is thick and sticky
Spoon "honey" into a mason jar or airtight container. Allow to cool completely at room temperature before putting an airtight lid on the container. The "honey" with thicken up more as it cools. Store in airtight container in the refrigerator up to 1 month. If this thickens after being stored microwave for a few seconds until it becomes your desired consistency
