Keto No Cook "Banana" Pudding

Ingredients

  • 214 grams powdered sweetener of choice (1 1/2 cups) I used powdered monkfruit allulose blend
  • 20 grams xanthan gum (2 TBS) must have for thickener
  • 4 cups milk of choice
  • 1 TBS banana extract adjust to taste
  • 2 tsp vanilla extract adjust to taste
  • yellow food coloring, optional

Instructions

  • Place all ingredients into a large blender. Blend on high 1 to 2 minutes or until smooth and thick. Serve immediately or store in airtight container in refrigerator up to 1 week
