Ingredients

'Fried" Egg In A Mug

  • 1/8 tsp salt
  • 1-2 large eggs

Fruit And Breakfast Whipped Cream

  • 1 cup heavy whipping cream
  • 1 TBS monkfruit sweetener, optional
  • 1/2 tsp vanilla extract
  • sliced fruit or berries of choice
  • 1-2 TBS chopped pecans and almonds

Peanut Butter Roll Up

  • 8 inch low carb tortilla
  • 2-3 TBS no sugar added peanut butter
  • chopped fruit or berries of choice
  • 1-2 TBS flax seeds

Instructions

"Fried" Egg In A Mug

  • Spray an 8-12 oz microwave safe mug with cooking spray. Sprinkle salt in the bottom of the mug. This will attract the heat and help the egg cook evenly. Crack 1 egg into the mug. Pierce the egg all over at least 5 times so the egg will not explode. Add the other egg if desired and pierce it also at least 5 times all over. Cover the mug with a small microwavable plate. Microwave on high for 30 seconds. Check and make sure the egg is beginning to turn white around the edges. This is a sign it is "frying." Return the plate to the top of the mug and microwave another 20-30 seconds or until the yolk is done to your desired taste.
  • Remember every microwave is different. Microwave mug on a paper plate until you know the correct time according to your microwave to avoid overflow.

Fruit And Breakfast Whipped Cream

  • Breakfast Whipped Cream: Place the heavy whipping cream in a small bowl. Add the monkfruit sweetener (if using) and the vanilla extract. Use a hand mixer and beat on medium high for 3-5 minutes or until thick. Do not over beat. The cream should be fluffy but firm enough to stick to a spoon when it is turned upside down. Place the fruit of your choice into a small bowl or cup. Top the fruit with the desired amount of breakfast cream..Sprinkle nuts on top of cream. If you have leftover whipped cream store it in an airtight container for up to 3 days or scoop it out 1 TBS at a time onto a lined baking sheet and freeze for 2 hours or until firm. Once the scoops are firm transfer them to a freezer bag.

Peanut Butter Roll Up

  • Spread the desired amount of peanut better across the low carb tortilla. Top the peanut butter with the fruit of your choice. Sprinkle flax seeds over the top of the fruit. Roll the tortilla around the fruit and seeds and cut the roll into 6-8 small roll ups
