Line a large baking sheet with parchment paper
In a large mixer bowl combine peanut butter, powdered Swerve, melted butter and vanilla. Beat on low for about 10 seconds or just to moisten the Swerve. Increase speed to medium and beat on medium for about 30 seconds or until a crumbly "dough" is formed. If your peanut butter is oily you may need to add a little more powdered Swerve to create a "dough"
Scoop the filling out 1 TBS at a time onto the prepared baking sheet. Place in the freezer about 10 minutes or until the mixture can be rolled into balls
Roll each scoop into balls and freeze another 20-30 minutes or until solid
In a shallow microwave safe bowl melt chocolate chips in the microwave about 30 seconds or until smooth
Remove balls from freezer. Roll balls one at a time in the melted chocolate until fully coated. Place back onto the baking sheet and refrigerate about 30 minutes or until solid. Store leftovers in the refrigerator
