The Quickest Keto Sesame Buns

Ingredients

  • 114 grams coconut flour (1 cup)
  • 14 grams baking powder (1 TBS)
  • 3 grams salt (1/2 tsp)
  • 2 grams xanthan gum ( 1 tsp)
  • 4 large eggs, room temperature
  • 180 milliliters olive oil or oil of choice (3/4 cup)
  • 2 TBS WARM water
  • sesame seeds

Instructions

  • Preheat oven 400 degrees. Spray 3-5 silicone burger molds 3 molds makes thicker buns 5 molds makes thin buns) with cooking spray or use foil burger rings.
  • In a large mixing bowl sift or whisk together all the dry ingredients except the sesame seed until there are no lumps in the dry ingredients
  • Stir the eggs into the dry ingredients until all the dry ingredients have been moistened
  • Stir the oil in until fully combined. Add the water and stir for at lest 20 seconds or until a smooth moist dough forms
  • Form dough into a ball and massage the dough to make sure of the texture. Dough should be slightly moist and smooth
  • Divide dough evenly among the prepared molds. Roll each portion into a smooth ball and flatten evenly throughout each mold. Make sure the buns are smooth
  • In a small bowl whisk together 1 egg and 1 TBS water until they are fully combined. Lightly brush the egg wash over the top of each of the buns
  • Sprinkle the top of each bun with desired amount of sesame seeds. Place in preheated oven and bake at 400 degrees for 20 minutes
  • Remove from the oven. Allow to cool in the molds about 15 minutes. Transfer to a wire rack and allow to cool completely before slicing
  • When ready to use slice the buns horizontally through the center to create a top and bottom bun, Store leftovers in an airtight container at room temperature up to 3 days or in the freezer up to 3 months
