Preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper. Set aside
Sift or whisk h=the dry ingredients into a large mixing bowl until there are no lumps in the dry ingredients
Stir the eggs in until all the dry ingredients are moist. Stir the butter and the extract in until the dough is smooth and lightly moist
Push dough to the center of the bowl a form into a smooth ball. Massage 1 minutes to fully incorporate the butter and test the texture of the dough. The dough should be soft and not crumbly
Scoop dough out 1 TBS at a time into the prepared baking sheet. Roll dough scoop into smooth tight balls. Use back of teaspoon or finger and press into the center of the dough balls to create and indention
Place cookies into the preheated oven. Bale at 350 10-12 minutes or until lightly golden
Remove from oven. Allow to cool on the pan 10 minutes or until firm. Transfer to a wire rack and allow to cool completely before topping the cookies
