Ingredients
84gramscoconut flour (3/4 cup)
20gramscocoa powder (1/4 cup)
1/4tspsalt
10gramsbaking powder (2 tsp)
100gramsgranulated sweetener of choice (1/2 cup), adjust to tasteI use granulated monkfruit sweetener
1tspinstant coffee powder, optionalthis will intensify the chocolate flavor
4largeroom temperature eggs
1/2cupbutter, melted and cooled
60gramsroom temperature plain yogurt or sour cream (1/4 cup)
1tspvanilla extract
Instructions
Preheat oven to 350 degrees. Line a 9 x 5 inch loaf pan with parchment paper. Allow the paper to hang over the sides for easy removal. Sift the dry ingredients into a large mixing bowl until there are no lumps
Stir in the eggs, butter, plain yogurt and vanilla until a smooth dough forms. Form the dough into a smooth ball. Place the dough into the prepared pan. Press evenly throughout the pan
Place into preheated oven. Bake at 350 degrees for 25 to 30 minutes or until a tester comes out clean. Remove from the oven and allow to cool in the pan at least one hour to firm up
Grasp the overhanging parchment paper. Transfer to a wire rack and allow to cool completely Before frosting. If desired spread desired frosting, glaze or topping of choice over top of the cake. Slice into desired size pieces and serve
