In a small bowl whisk together all ingredients except chicken until smooth
Place chicken in a large Ziploc bag and pour marinade over chicken. Seal bag and turn bag to coat the chicken.
Allow chicken to marinade at room temperature 15 minutes or in the refrigerator up to 2 hours
Preheat a large skillet over medium heat 3 to 5 minutes or until hot
Place chicken and marinade into preheated skillet
Bring to a low boil and cook 10 minutes. Turn the chicken and cook another 10 minutes or until internal temperature is at least 165 degrees
Remove from heat. Serve warm over vegetables of choice or rice substitute of choice
For a thick sauce place ingredients except chicken into saucepan over medium heat. Add 1/4 tsp xanthan gum and stir until combined and smooth.
Bring to a low boil. If needed whisk in more xanthan gum in small amounts until sauce is desired consistency
Pour over chicken and cook as directed above
