Ingredients
Sauce
1/2poundlean ground beef
dry seasonings of choice
2cupsketo pasta sauce of choice
1 1/2tspdry Italian seasonings
Cheese Filling
6ozricotta cheese
1largeegg
11gramsfreshly grated Parmesan cheese
salt and pepper to taste
Noodles
45gramscoconut flour
1/2tspxanthan gum
dry seasoning of choice. (optional)
4largeegg yolks, room temperature
Instructions
Sauce
Place ground beef in a large skillet over medium heat
Season beef according to taste. Chop beef into small pieces and cook until no longer pink
Drain the beef and place back into skillet. Add pasta sauce and seasonings. Stir to combine
Bring to a low boil over medium heat. Simmer 5 minutes to combine flavors. Set aside
Cheese Filling
Place ingredients in a small bowl and stir until fully combined. Set aside
Noodles
Place 6 cups of water in a large skillet and bring to a full boil
Whisk together flour, xanthan gum and seasonings ( if using ) in a large mixing bowl until there are no lumps
Add the egg yolks and stir until the eggs begin to combine. Use fingers and massage the dry ingredients into the egg yolks until fully combine and you have a dry firm dough
Divide dough into 4 portions. Roll each portion out to a 7 x 2 1/2 inch strip
Place noodles in a single layer into the boiling water. Bring back to a low boil over medium heat
Cover and cook 5 to 7 minutes or until white and firm. Remove cooked noodles with a slotted spatula and place on a plate to drain
Assemble
Place 1/2cup of meat mixture in a thin layer across the bottom of an 8 x8 inch cassserole dish
Place 2 noodles on top. Top the noodles with the cheese sauce and spread evenly
Top with desired amount of shredded mozzzarella cheese. Spread half of the meat mixture over the mozzarella
Top with 2 more noodles and the remaining meat sauce. Top with 1 1/2 cups of shreddded mizzzarella cheese
Place in preheated oven Bake at 375 degrees for 20 minutes or until heated through
Remove from oven. Let stand 5 minutes before serving
