30 Minute Keto Cheesy Fajita Thighs

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 30 ml (2 TBS) olive oil
  • 2 TBS dry fajita seasonings
  • 1 medium red bell pepper, chopped
  • 3 mini sweet peppers, chopped
  • 1/4 of a red onion, chopped
  • 8 oz (1 cup) shredded cheese,
  • Keto Spanish rice substitute of choice recipe below

Instructions

  • Preheat oven to 375 degrees. Lightly grease a 3 quart casserole dish. Toss the chicken with the oil and dry seasonings in a large bowl until the chicken is coated with the oil and seasonings. Place the coated chicken in the prepared dish. Top the chicken evenly with the vegetables. Sprinkle the cheese evenly over the chicken and vegetables until fully coated.
  • Place the chicken in the preheated oven. Bake for 30 minutes until the cheese is bubbly and the chicken is at least 165 degrees. Once done cooking, remove the chicken from the oven and allow to cool in pan at least 5 minutes before serving over the rice or pasta substitute of choice. If desired top with sour cream, guacamole or salsa

5 Minute Keto Spanish Rice or Pasta Substitute

This recipe is designed to teach everyone how to make 5-minute keto Spanish rice or pasta substitute.

Ingredients

  • 7 oz Miracle rice or noodles or rice/pasta substitute of choice
  • 1/2 tsp ground cumin
  • 1/2 tsp chicken bouillon granules
  • 1/2 tsp chili powder
  • 1/4 cup chunky salsa
  • 1/2 cup black soybeans, rinsed and drained
  • 2 oz (1/4 cup) shredded cheese

Instructions

  • Preheat a medium skillet over medium heat 3 to 5 minutes until warm. Rinse and drain the Miracle noodles/pasta. Place drained rice/pasta in the preheated skillet. Cooke 5 minutes until moist of the moisture is absorbed. Stir in the dry seasonings, salsa and soybeans until fully combined. Gradually stir in the shredded cheese until fully added.
  • Stir constantly for 3 to 5 minutes or until fully combined and the cheese is fully melted. Remove from heat and serve immediately as a side or in any recipe that requires Spanish rice.
