5 Minute Keto Chicken Salad

This recipe is designed to teach everyone how to make 5-minute keto chicken or tuna salad

Ingredients

  • 12 1/2 oz canned chicken or tuna
  • 3 TBS mayonnaise
  • 3 TBS sour cream
  • 1 TBS lemon or lime juice
  • 1/2 tsp ground cumin
  • 1 tsp onion powder
  • salt and pepper to taste
  • 1/2 medium cucumber, chopped
  • 1 medium Roma tomato, chopped
  • 1/2 small jalapeno, chopped and seeded
  • 1 mini sweet pepper, chopped and seeded
  • 1 cup canned baby corn drained, and chopped
  • 2 TBS fresh cilantro, chopped
  • 1 tsp chili powder

Instructions

  • Completely drain the canned chicken/tuna. Use a fork and shred the chicken/tuna. Combine everything in a large mixing bowl. Stir everything together until fully combined and all the vegetables are completely coated. Serve immediately or cover and chill in the refrigerator at least 1 hour before serving. Serve in a wrap, sandwich or as a snack/appetizer on keto crackers/chips.
