Ingredients

  • 10 grams (2 TBS) whole psyllium husk
  • 112 grams (1 cup) coconut flour
  • 8 grams (2 tsp) baking powder
  • 1/4 tsp salt
  • optional dry seasonings I use 1tsp dry oregano and 1 TBS instant dry yeast
  • 4 large eggs, room temperature
  • 1/2 cup butter, melted
  • 118 ml (1/2 cup) HOT water

Topping

  • 1 TBS olive oil
  • 1/2 oz (2 TBS) freshy grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 TBS dry oregano

Instructions

  • Preheat the oven to 350 degrees. Lightly grease 3 six-inch sub bread molds. Set aside. Grind the psyllium husk until it is half of its volume. Pour the ground husk into a large mixing bowl. Sift the dry ingredients into the bowl with the ground husk until there are no lumps.
  • Stir the wet ingredients into the dry ingredients for 1 minute until fully combined and a lightly moist dough has formed. Form the dough into a ball. Knead the dough in the bowl for 1 minute until smooth and flexible. Let the dough sit at room temperature for 10 minutes to absorb and bind together.
  • Line a clean worksurface. Divide the dough into 3 equal portions. Dampen hands and form each portion into a smooth 6-inch-long log. Keep hands damp and dough smooth. If needed use damp fingers to rub out any cracks. Place the shaped portions into the prepared molds.
  • In a small bowl stir together all the topping ingredients except the oil. Place the molds onto a baking sheet. Lightly brush the tops of each dough portion with the olive oil. Sprinkle the cheese mixture evenly over the tops of each dough portion. Place the molds in the preheated oven and bake 30 to 35 minutes until golden.
  • Remove the bread from the oven and allow to cool in the molds 5 to 7 minutes to firm up. Once firm, remove the bread from the molds and transfer to a wire rack. Allow the bread to cool completely before slicing. Once cooled, turn each bread on its side. Cut the bread in half to create a top and a bottom portion. Fill with desired filling and serve
