
Quick Keto Onion Buns
This recipe is designed to teach everyone how to make quick keto onion buns
Servings 5 buns
Ingredients
- 1 1/2 TBS olive oil
- 1/2 medium red onion, finely chopped
- 10 gram (2 TBS) whole psyllium husk
- 112 grams (1 cup) coconut flour
- 8 grams (2 tsp) baking powder
- 1/2 tsp salt
- 1 1/2 tsp onion powder
- 9 grams (1 TBS) instant dry yeast, optional
- 36 grams (3 TBS) granulated monk fruit sweetener
- 4 large eggs, room temperature
- 60 ml (1/4 cup) olive oil
- 1/4 cup butter, melted
- 118 ml (1/2 cup) HOT water
Instructions
- Preheat the oven to 350 degrees. Lightly grease 5 silicone hamburger bun molds. Set aside. Pre heat the 1 1/2 TBS of oil in a large skillet over medium heat for 3 to 5 minutes until heated. Add the onions and cook stirring occasionally, 5 minutes until browned. Once browned, remove onions from the heat and allow to cool while making the buns.
- Grind the psyllium husk for 30 seconds or until it is half its volume. Pour the ground husk into a large mixing bowl. Sift the dry remaining dry ingredients into the bowl with the husk until there are no lumps. Stir in the eggs, oil and butter until fully combined.
- Stir in the hot water for 1 minute until a smooth moist dough forms. Form the dough into a ball. Knead the dough in the bowl for 1 minute until smooth and flexible. Allow the dough to sit a room temperature for 10 minutes to absorb and bind.
- Divide the dough into 5 equal portions. Roll each portion into a smooth ball. Place the dough balls into the prepared bun molds. Use hand and slightly flatten the tops of the dough balls. Keep the dough smooth at all times. In a small bowl whisk together 1 large egg and 1 TBS water until fully combined.
- Lightly brush the tops of the buns with the egg wash. Sprinkle desired amount of the cooked onion over the egg wash and tap gently to secure them. Place in the preheated oven and bake for 30 to 35 minutes until golden.
- Remove the buns from the oven and allow to cool in the molds for 20 minutes or until firm. Once firm, remove the buns and transfer them to a wire rack. Allow them to cool completely before slicing them. When ready to use turn the buns on their side and cut them in half to create a top and bottom portion.
