Ingredients
2lbsboneless skinless chicken thighs
2TBSdry ranch seasoning
1mediumzucchini, thinly sliced
6slicesbacon, cooked, drained and chopped
2ozfreshly grated parmesan cheese
2ozshredded mozzarella cheese
Instructions
Preheat oven to 425 degrees. Place the thighs in a single layer in a 3-quart casserole dish. Sprinkle the ranch seasoning evenly over the thighs. Line the zucchini in a single layer over the chicken. Scatter the bacon evenly over the top of the zucchini. Sprinkle both cheeses evenly over the bacon.
Place the dish in the preheated oven. Bake for 20 minutes or until the internal temperature of the chicken is at least 165 degrees. Once baked, remove the chicken from the oven and allow it to cool in the pan at least 5 minutes before serving.
