Ingredients
2cupsmixed berries, frozen
1/4cupfull fat coconut milk
few drops liquid stevia, optionalthe berries give the ice cream a nice sweet flavor but if more sweetness is desired add the desired amount of liquid stevia
Instructions
Place all ingredients in a large blender. (make sure the blender is able to blend ice)
Pulse the blender on medium high for a few seconds just to start breaking up the fruit
Blend on medium high for 45 seconds to 1 minuted or until the desired consistency (if you have a Ninja Cafe IQ blender use the ice cream setting) Serve immediately. If desired add a few more tablespoons of coconut milk for a more creamy texture.
Store leftovers in the freezer in an airtight container. This is designed to be eaten immediately, if left in the freezer it will freeze solid. If the ice cream does freeze solid. Leave it at room temperature for 10-20 minutes or until desired consistency or you can put it in the microwave for about 10-20 seconds until desired consistency,

This recipe yields about 1 pint (2 cups) of ice cream. 1 serving equals about 1/2 cup1 serving contains about 6.5 grams of net carbs
