Ingredients
28grams(1/4 cup) coconut flour
39grams(6 TBS) golden flaxseed meal
8grams(2tsp) baking powder
1/4tspsalt
1/2TBSinstant dry yeast, optional
2largeroom temperature eggs
2TBSbutter, melted
Instructions
Sift the dry ingredients into a large mixing bowl until there are no lumps. Stir the eggs and melted butter into the dry ingredients until a smooth, wet dough forms. Scrape down the sides of the bowl. Knead the dough in the bowl for 1 minute until the dough forms a ball. Preheat a large skillet over medium-low heat for 3 minutes or until warm.
Line a clean worksurface. Divide the dough into 3 equal portions. Roll each portion into a smooth ball. Flatten the balls into 3-inch diameter circles. Place the muffins into the preheated skillet. Cover the skillet. Cook 1 to 2 minutes until the underside in brown. Turn the muffin over. Cover and cook under 1 to 2 minutes until brown on both sides.
Remove the muffins from the skillet. Cool completely before slicing and serving
