Ingredients
120gramscoconut flour (1cup)
15gramsbaking powder (1 TBS)
20gramscocoa powder (1/4 cup)
2gramssalt (1/2 tsp)
144gramsgranulated sweetener of choice (3/4 cup), adjust to tasteI use granulated golden monkfruit sweetener
4largeeggs, room temperature
1cuproom temperature butter, softened
60gramsroom temperature plain yogurt (1/4cup)
59milliliterscooled brewed coffee (1/4 cup)this helps enhance the chocolate flavor
8gramsvanilla extract (2 tsp)
4 Ingredient Keto Chocolate Icing
193gramsgranulated sweetener (1 cup)
3TBSbutter
76millilitersmilk of choice (1/3cup)
6ozketo chocolate chips
Instructions
Preheat oven to 350 degrees. Line an 8 inch cake pan with parchment paper
Sift all dry ingredients into a large mixer bowl until there are no lumps
Add eggs and stir until all the dry ingredients are moist
Add the butter and stir until fully combined. Add the yogurt and stir to fully combine
Add the coffee and vanilla. Stir until fully combined and smooth
Form the dough into ball and press evenly into the prepared pan. Bake at 350 degrees for 25 to 30 minutes or until a tester comes out clean
Remove from the oven. Allow to cool in pan at least 30 minutes or until firm. Once firm carefully remove the cake from the pan and transfer to wire rack. Allow to cool completely before icing the cake
4 Ingredient Keto Chocolate Icing
Place sweetener, butter and milk of choice into a medium saucepan over medium heat. Stir constantly until the butter in melted and mixture comes to a low boil
Increase heat to medium high and stir constantly for 1 minute remove from the heat and stir in the chocolate chips until fully melted and smooth. Pour immediately onto cool cake and allow to sit at least 15 minutes for the icing to firm up
Serve immediately or store leftovers in an airtight container at room temperature up to 5 days
